Hey Team!
Today I want to introduce you to one of my favorite recipes. It’s a little something I like to call, “Bachelor Pie”:
Bachelor Pie:
1 cup Mystery Leftovers
1 cup “Can you smell this, I think it’s still good” (separate from, “No, that’s fuzzy.”)
1 cup “Hey dude is this stuff in the green container yours or mine?”
2 eggs
1 cup fat-free half & half
1 pie crust (whole wheat)
Mix eggs and half & half
Combine first three mystery ingredients and put in pie crust
Pour egg mixture over mystery ingredients and bake for 45min at 350 degrees
Set under broiler on high for 1 minute to brown (1 minute ONLY please!)
Let sit for 10 minutes
Serve and enjoy!

What’s that look on your face? What do you mean it doesn’t sound appetizing?! It’s nutritious, delicious, and has all your favorite ingredients! Oh I see what’s going on… you haven’t embraced the power of leftovers yet! Yeah, I used to be like that too. The refrigerator was this mysterious space where fresh food would go in and two weeks later, new life forms would spring forth walking and talking their way to the trash bin. Well that’s all about to change with this recipe! Bachelor Pie (some fancy folks like to call it “Quiche”) is a great way to use your leftovers. Here are some ideas from what I have in my fridge right now:
• Dry chicken from lunch at a local restaurant yesterday… yeah that’ll work. Let’s shred that up.
• Artichoke hearts from the 2lb container I bought at the Wholesale Club last week (why did I buy 2lbs worth!?)… yeah that’s good, but let’s only use ½ cup
• Onions… bingo baby, let’s dice that up
• Broccoli on its last leg… oh yeah, that’s great for texture (and great for you too!). We’ll cut those up in to bite-size pieces
• Some hard cheese I bought at that wine thing last week… um yes please. Shred that up first though
Anyway, that’s a meal right there! Combine it in some form that makes up 3 cups total and follow the directions above. Just remember, your pie is only as healthy as the ingredients you put in it so you can keep the fatty bacon and cheeses out of it please! It’s a great recipe to make use of your leftovers and it’ll make anyone feel like a 5-Star chef.
